The fact that they're monsters, just like the Janitor is also a monster, makes them suitable for the monstrous task of being the Chefs of the Maw. It could also mean this literally, that they were raised or created, perhaps by the Lady, to be the chefs of the Maw, which is why she has portraits of them as children. This could mean that they're very talented chefs, but their filthy kitchen and that they cough at the food makes you think otherwise. The lore says that they were "born to be chefs". Seeing that one is pink and one is green, do they wear fake skin over their arms too? If you compare their real faces to the masks, there are similarities to hint that this is indeed the Chefs: one has a small mouth, small nose, small eyes, one has a big nose, big mouth, big eyes-just like their masks. Herded into the large hall, they slump into their bowing stools, and there they feed. The Guests are an essential part of The Maw’s life-cycle. They are also briefly seen in both The Lady's Quarters and The Residence chapters. They are encountered in The Guest Area and are the main antagonistic faction of said chapter. They needs to wear the masks to look human to the Guests. The Guests are the second minor enemies encountered in Little Nightmares. I believe these portraits are the Chefs as children, and that whatever the giant people are, the Chefs are something else. If anyone wonders what the Chefs look like beneath their masks and why they wear them, I believe these portraits answers the questions.
